Valpolicella Ripasso DOC Dindo 2021
Wine Description
Dindo's Valpolicella Ripasso Classico is the family's dinner wine, made in Fumane from Corvina Veronese 70%, Rondinella 25% and Corvinone 5%. After a ten day first fermentation in steel at a cool 18 °C, the wine goes back over the estate's own Amarone pomace for a second fermentation of about fifteen days, longer than most houses allow, then rests twelve months in oak barrels before release.
At 14.5% it sits squarely in the ripasso sweet spot: ripe cherry and white flowers with a caramel warmth from the Amarone skins, a full, round palate and velvety tannins that finish savoury rather than sweet. Serve at 16 to 18 °C with half an hour of air. It belongs beside bigoli with duck ragu, guinea fowl, fegato alla veneziana, grilled sausages with polenta or mature cheeses, and it keeps its composure right through a long, talkative dinner.
Winery
Giovanni Dindo established his family winery in the 1960s in the hills of Fumane, and three generations later it remains a small, hands on estate of about five hectares on Monte Sant'Urbano, in the heart of the Valpolicella Classica. Every stage, from the rows to the drying loft to the cellar, is watched over by the family itself. The range stays deliberately short, Valpolicella Ripasso and Amarone above all, made the traditional Fumane way with long, cool macerations and patient aging in a mix of French tonneaux and large oak casks.
