Soave DOC “Le Calle” 2023
Wine Description
Le Calle is a single-vineyard Soave DOC produced by Ilatium Morini from 100% Garganega grapes grown in the Mezzane di Sotto and Valle d’Illasi areas of the Veneto, on clayey-calcareous soils at altitudes above 100 metres. The vines are over 30 years old and are trained using the traditional pergola system. After harvest in the first ten days of September, the grapes are placed in crates and left to dry for 30 to 40 days before destemming and pressing, a partial appassimento that concentrates flavour and adds structural richness. Fermentation and refinement take place in stainless steel, preserving the fresh, aromatic character of the variety. The wine is straw-yellow in colour with good consistency, and shows the typical Garganega profile of floral and fruit aromas supported by mineral notes. No oak ageing is used, keeping the wine clean, direct, and food-friendly.
