“Opera Semplice” Metodo Classico Pas Dosè S.A.
Wine Description
Opera Semplice is a non-vintage Metodo Classico Pas Dosé produced by Suavia, a family estate run by the Tessari sisters in Fittà, a small village in the Soave Classico hills of the Veneto. It is made from 100% Trebbiano di Soave grapes, harvested manually in boxes at the beginning of September, using fruit selected only in the best years. After alcoholic fermentation in stainless steel, the wine undergoes a secondary fermentation in bottle and spends 24 months on the lees before disgorgement with no dosage added. The wine has a bright straw yellow colour with a very fine and continuous perlage, and with zero dosage and residual sugar below 3 g/l it is bone dry, offering sharp acidity, citrus and mineral character, and a long savoury finish. This bottling is part of Suavia’s ongoing research into Trebbiano di Soave, a variety with deep roots in the Soave area that the estate has worked to restore and document.
