Soave DOC “Ilatium Morini” 2024
Wine Description
Ilatium Morini is a family operation founded by seven Morini cousins in the Veneto, drawing on vineyards in Mezzane di Sotto and the Valle d’Illasi in the province of Verona. The Soave is made from approximately 80% Garganega and 20% Trebbiano di Soave, both destemmed and pressed before cold fermentation in stainless steel at 15 to 16°C for around 15 days. This process preserves freshness and the natural aromatic character of the fruit. The wine is straw yellow in color and shows the crisp, floral profile typical of the Soave DOC. No oak aging is used, keeping the style lean and mineral. It is intended for early drinking and suits everyday occasions.
