Valpolicella Ripasso DOC Superiore 2023 – MAGNUM
Wine Description
The Dal Cero Family Valpolicella Ripasso Superiore DOC is produced at the family’s estate in the eastern area of the Valpolicella DOC, on limestone and calcareous marl soils near the borders of the Soave and Roncà growing zones. The blend is 60% Corvina, 30% Rondinella, and 10% Molinara, all native Veronese varieties. After harvest, the grapes are destemmed, crushed, and macerated in stainless steel for 10 to 12 days. Following alcoholic fermentation, the wine rests in steel until January, when it is re-passed over the still-warm Amarone pomace for 7 to 8 days at 25 to 28°C, picking up additional depth, structure, and dried-fruit character. The wine then matures in large oak casks and ovals before bottling. The 2023 vintage presents a deep ruby colour with a full, complex profile shaped by the ripasso technique.
