About Riso Sake

The sakagura
Riso Sake describes itself as the first and only sakagura, or sake brewery, in Italy. It stands in Feltre, in the province of Belluno in the Veneto, at Via Pasubio 4A, and the brand belongs to Lab4beer of Nicola Coppe. Coppe founded it and leads the work as kuramoto (brewery manager), kurabito (cellar worker) and toji (master brewer). He is known in Europe as a pioneer of sour beers, and in 2021 he earned a Sake Sommelier certification from the Sake Sommelier Association Italiana. The project began in 2019, when the team won the Univenture startup competition and received the award at Startup Italia 2019.
The idea is a sake that stands out in Italy and abroad, joining the old Japanese art of nihonshu with an Italian touch. Production follows traditional koji fermentation, and the rice is Italian Carnaroli, the grain usually used for risotto.
The sake
The range has four families. Sparkling sake includes Mövat. Traditional sake includes Vero, Harmoniae and Dellarole. Special sakes include Chinese Originario, Nube (a nigori) and a Taru sake, and there are sake liqueurs called Corniolashu and Marascashu. A line named Ingredients offers koji, spores and sake kasu for restaurant kitchens. Visits to the sakagura are possible.
