Trento DOC “Blauwal”
Wine Description
Blauwal Cuvee is a Trento DOC Extra Brut sparkling wine produced by the Cesconi family, a small family-run winery on the hills of Pressano, north of Trento, with a winemaking history dating back to 1751. The blend is composed primarily of Chardonnay with small proportions of Pinot Bianco and Pinot Nero, drawn from multiple vineyards on the Pressano hillside and complemented by reserve wines from previous vintages. Grapes are soft-pressed with a yield not exceeding 60%, and the base wine undergoes fermentation in a combination of stainless steel tanks and used barriques, followed by full malolactic fermentation before tirage. The wine ages on the lees in bottle for a minimum of 36 months through the Classic Method, with a very low dosage kept to preserve the natural character of the base wine. The vineyards sit on sedimentary soils with layers of compact sandstone from the Werfen formation, a geology that contributes the wine’s characteristic mineral tension and freshness.
