Trento DOC Riserva Extra Brut “Der Blauwal” 2016

Der Blauwal Riserva is a Metodo Classico sparkling wine from Cesconi, a small family winery on the Pressano hills north of Trento. It is made from 100% organic Chardonnay grown in a single vineyard at 500 to 550 metres above sea level, trained on traditional pergolas and planted on ancient sedimentary soils composed of compact sandstone from the Werfen formation. Whole-cluster soft pressing keeps the yield at or below 60%, and the must ferments in used barriques before undergoing malolactic fermentation. The wine spends a minimum of 84 months on the lees in bottle before disgorgement, with the dosage liqueur prepared from the same base wine to maintain consistency. It is released as an Extra Brut with a dosage of approximately 3 g/l. The 2016 vintage is certified organic.
