Barolo DOCG 2016
Wine Enthusiast 95Wine Advocate 95
Wine Description
Paolo Scavino is based in Castiglione Falletto and produces this Barolo by blending selected plots from seven crus across the appellation, a practice that defines the house style. The grapes are destemmed and lightly crushed, then macerated and fermented in temperature-controlled stainless steel tanks with indigenous yeasts. Malolactic fermentation takes place in oak barrels, and tartaric stabilization occurs naturally during winter cold. Each cru plot is aged separately for ten months in neutral French oak barrels, followed by a further twelve months in large casks. A final blend is assembled from the best-performing plots of the vintage, then the wine rests for approximately ten months in bottle before release. The 2016 vintage delivered slow, even ripening across the Langhe, producing wines with depth, firm structure, and good balance.
