“Kairos” Rosso Veneto IGT 2021
Wine Description
Kairos is Celestino Gaspari's mosaic: a single red assembled from over fifteen varieties grown together, Corvina, Corvinone and Rondinella beside Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Teroldego, Croatina, Oseleta, Sangiovese, Marzemino and even a share of white grapes like Garganega and Trebbiano. The name is ancient Greek for the right moment, and the patchwork label makes the idea visible before the cork is out.
The winemaking is as deliberate as the blend is wild: cold maceration, fermentation with indigenous yeasts in steel and concrete for 20 to 25 days with only manual punch downs, then at least three years in French barriques without racking and a further year in bottle. At 15% it is a rich, spiced, dark fruited red with unusual aromatic complexity, closer to a southern Rhône in spirit than to Amarone, yet unmistakably Veronese underneath. Decant it for an hour and serve at 18 °C with lamb, spiced braises or hard cheeses.
Winery
Zymé is the estate of Celestino Gaspari, son in law and long time collaborator of Giuseppe Quintarelli, based at San Pietro in Cariano in a cellar carved around a fifteenth century quarry. The name comes from the Greek for yeast, a declaration of the house's taste for fermentation and transformation. The range runs from a serious Valpolicella to Amarone and the Riserva La Mattonara, along with inventions like Kairos and From Black to White that no appellation rulebook would have predicted.
