La vigne se trouve \u00e0 environ 160 m\u00e8tres d'altitude sur des sols argilo-calcaires \u00e0 pH basique, conduite en Guyot simple et plant\u00e9e \u00e0 5 000 pieds par hectare, avec des rendements maintenus en dessous d'un kilogramme par pied. La vinification du 2012 commence par un foulage des grappes enti\u00e8res aux pieds, suivi d'une fermentation naturelle avec des levures indig\u00e8nes dans une cuve tronconique en ch\u00eane fran\u00e7ais non toast\u00e9, avec plusieurs remontages et pigeages pendant la mac\u00e9ration et une mac\u00e9ration post-fermentaire suppl\u00e9mentaire de cinq jours. La fermentation malolactique se d\u00e9roule naturellement au printemps suivant la r\u00e9colte dans des barriques de deuxi\u00e8me et troisi\u00e8me usage, puis le vin est \u00e9lev\u00e9 dix mois en barriques de ch\u00eane fran\u00e7ais, sept mois en cuves inox et au moins douze mois en bouteille avant sa mise en march\u00e9.
