Les raisins sont vendang\u00e9s \u00e0 la main en caisses, \u00e9grapp\u00e9s, puis ferment\u00e9s avec des levures indig\u00e8nes sauvages sur les peaux sans contr\u00f4le de temp\u00e9rature. Apr\u00e8s la fermentation, le vin repose en cuves b\u00e9ton et\/ou en f\u00fbts de ch\u00eane de Slavonie non toast\u00e9s sur ses propres lies pendant au moins un an. Le 2021 est mis en bouteille sans filtration, puis continue \u00e0 \u00e9voluer en bouteille. Il pr\u00e9sente une couleur ambr\u00e9e-orang\u00e9e profonde et la texture caract\u00e9ristique d'un long contact avec les peaux, avec un tanin l\u00e9ger \u00e9quilibr\u00e9 par une acidit\u00e9 vive et un caract\u00e8re min\u00e9ral volcanique.\n\nMenti est un petit domaine familial install\u00e9 \u00e0 Gambellara, dans la r\u00e9gion de V\u00e9n\u00e9tie, dans le nord-est de l'Italie. Le domaine est g\u00e9r\u00e9 par Giovanni Menti et se concentre sur le c\u00e9page indig\u00e8ne Garganega cultiv\u00e9 sur des sols de basalte volcanique.
