Le Valpolicella DOC Superiore 2021 est issu d'un assemblage de Corvina et Corvinone (70 %), Rondinella (20 %), Croatina (5 %) et Oseleta (5 %). Le vin utilise une m\u00e9thode d'appassimento partiel, combinant 70 % de raisins frais et 30 % de raisins s\u00e9ch\u00e9s pendant environ 60 jours avant la fermentation. Apr\u00e8s fermentation, le vin est \u00e9lev\u00e9 24 mois en tonneaux puis repose encore 24 mois en bouteille avant sa commercialisation. Le r\u00e9sultat est un Valpolicella plus charnu et concentr\u00e9 qu'une version classique, tout en conservant la fra\u00eecheur et l'\u00e9quilibre typiques de l'appellation.\n\nComaroto est le domaine des fr\u00e8res Dal Forno \u00e0 Monte Tenda \u00e0 Illasi, face au ch\u00e2teau m\u00e9di\u00e9val du village, et il est n\u00e9 comme une \u00e9volution naturelle de la tradition familiale qui a rendu la Val d'Illasi c\u00e9l\u00e8bre aupr\u00e8s des amateurs d'Amarone. Vignes et oliveraies entourent le chai, et le travail suit la m\u00e9thode exigeante de la famille : faibles rendements, s\u00e9chage soign\u00e9 et \u00e9levage sans pr\u00e9cipitation, tout r\u00e9alis\u00e9 sur place.
