L'assemblage se compose de 70% de Corvina, 25% de Corvinone et 5% de Rondinella, cultiv\u00e9s sur des sols rocailleux \u00e0 fort squelette, bien adapt\u00e9s \u00e0 la production de rouges structur\u00e9s. Les raisins sont vendang\u00e9s manuellement fin septembre \u00e0 d\u00e9but octobre, en ne s\u00e9lectionnant que les meilleures parties de chaque grappe, puis s\u00e9ch\u00e9s pendant au minimum 90 jours avant que la vinification ne d\u00e9bute en janvier. La fermentation alcoolique se d\u00e9roule en cuves inox tronconiques \u00e0 temp\u00e9rature contr\u00f4l\u00e9e avec pigeage quotidien, suivie d'un \u00e9levage en f\u00fbts de bois et d'un vieillissement en bouteille avant la mise en march\u00e9. Le vin a obtenu 90 points de Decanter lors d'une d\u00e9gustation \u00e0 l'aveugle en 2019, soulign\u00e9 comme pleinement mature avec un caract\u00e8re distinctif de fleurs s\u00e9ch\u00e9es et de vieux parchemin.\n\nValentina Cubi et son mari Giancarlo Vason ont acquis dix hectares de vignes \u00e0 Fumane en 1970, dans la Valpolicella Classica, et le domaine de Via Casterna porte toujours son nom. Les vignes sont implant\u00e9es entre 290 et 350 m\u00e8tres, expos\u00e9es au sud et au sud-est, plant\u00e9es principalement en Corvina, Corvinone, Rondinella et Molinara ; la viticulture est enti\u00e8rement biologique depuis 2014, avec la conviction qu'un grand vin na\u00eet dans la vigne plut\u00f4t qu'\u00e0 la cave.
