Die Vinifizierung des 2012er beginnt mit dem Stampfen ganzer Trauben mit den F\u00fc\u00dfen, gefolgt von einer nat\u00fcrlichen Verg\u00e4rung mit Spontanhefen in einem unger\u00f6steten franz\u00f6sischen Eichenfass in Kegelstumpfform, mit mehreren \u00dcberl\u00e4ufen und Untertauchen der Maische sowie einer zus\u00e4tzlichen f\u00fcnft\u00e4gigen Maischestandzeit nach der G\u00e4rung. Die malolaktische G\u00e4rung verl\u00e4uft nat\u00fcrlich im darauffolgenden Fr\u00fchjahr in zweit- und drittbelegten Barriques, gefolgt von zehn Monaten in franz\u00f6sischen Eichenholzbarriques, sieben Monaten in Edelstahltanks und mindestens zw\u00f6lf Monaten in der Flasche vor dem Verkauf.
