Der Boden ist \u00fcberwiegend mor\u00e4nischer Kalkstein, reich an Steinfragmenten und Ton, der haupts\u00e4chlich aus wei\u00dfem und wei\u00dfrosa Mergelkalk besteht, bekannt als Biancone und Scaglia Rossa. Die Lese erfolgt in zwei getrennten Phasen: In der zweiten Septemberh\u00e4lfte wird eine erste Auswahl getroffen; diese Trauben werden in Kisten gelegt und zwei Monate getrocknet, bevor sie rund 20 Tage verg\u00e4ren und anschlie\u00dfend 24 Monate in franz\u00f6sischen Eichenholzf\u00e4ssern reifen. Die verbleibende Corvina bleibt bis Ende Oktober am Stock, um dort \u00fcberzureifen, und wird danach in Edelstahltanks ohne Holzkontakt vergoren. Der Cresasso ist die endg\u00fcltige Cuv\u00e9e dieser beiden Verg\u00e4rungen und verbindet den Reichtum und die Struktur der Trockentraubenkomponente mit der Frische des sp\u00e4tgeernteten Anteils.
