Der Amarone 2021 wird aus 60% Corvina, 20% Rondinella, 10% Oseleta und 10% Croatina gekeltert, aus Reben im Alter von 40 bis 60 Jahren auf Kalk-, Schluff- und Tonb\u00f6den. Die Trauben werden zwischen dem 10. September und dem 15. Oktober von Hand gelesen und anschlie\u00dfend rund drei Monate in R\u00e4umen mit kontrollierter Bel\u00fcftung getrocknet, bevor sie Mitte Dezember gepresst werden. Die G\u00e4rung findet in Edelstahl bei etwa 28 \u00b0C statt und dauert etwa 15 Tage, gefolgt von 24 Monaten Reife in neuen Barriques und weiteren 24 Monaten Flaschenreife vor der Freigabe. Der Jahrgang 2021 in der Valpolicella war durch einen kalten Fr\u00fchling mit Fr\u00f6sten und einen trockenen, hei\u00dfen Sommer gepr\u00e4gt und brachte Weine mit ausgewogener Struktur und gutem Alterungspotenzial hervor. Bei 16,5% vol. ist der Wein vollmundig und konzentriert; Dekantieren wird vor dem Servieren empfohlen.\n\nComaroto ist das Gut der Br\u00fcder Dal Forno auf dem Monte Tenda in Illasi, mit Blick \u00fcber das Tal auf die mittelalterliche Burg des Ortes, und es entstand als nat\u00fcrliche Weiterentwicklung der Familientradition, die das Val d'Illasi unter Amarone-Liebhabern bekannt gemacht hat. Weinberge und Olivenhaine umgeben den Keller, und die Arbeit folgt der akribischen Methode der Familie: niedrige Ertr\u00e4ge, sorgf\u00e4ltige Trocknung und ungeheiltes Reifen, alles im eigenen Betrieb.
