Der Wein entsteht aus einer Cuv\u00e9e von Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Nebbiolo, Sangiovese und Croatina, alle von Hand gelesen. Nach der Ernte werden die Trauben rund 120 Tage auf Gestellen nach der Appassimento-Methode getrocknet, wodurch sich ihre nat\u00fcrlichen Zucker und Aromen konzentrieren, bevor eine langsame, ausgedehnte G\u00e4rung folgt. Nach dem Unterbrechung der G\u00e4rung zur Bewahrung der Rests\u00fc\u00dfe reift der Wein f\u00fcnf bis sechs Jahre in gro\u00dfen slawonischen Eichenf\u00e4ssern. Das Ergebnis ist ein tiefes Rubingranat mit einer komplexen Nase aus schwarzer Kirsche, rotem Fruchtgelee, Pflaume, s\u00fc\u00dfen Gew\u00fcrzen, Kakao und Balsamik, sowie einer weichen, ausgewogenen S\u00fc\u00dfe am Gaumen. Quintarelli produziert diesen Wein nicht in jedem Jahrgang, was den 2011er zu einer relativ seltenen Abf\u00fcllung von einem der angesehensten G\u00fcter der Valpolicella macht.\n\nGiuseppe Quintarelli, der stille Meister der Valpolicella, f\u00fchrte das Weingut seiner Familie in den H\u00fcgeln von Negrar von 1950 bis zu seinem Tod im Jahr 2012 und setzte damit einen Ma\u00dfstab, an dem sich die Region bis heute misst. Seine Tochter Fiorenza und ihre Familie f\u00fchren den Keller genau so weiter, wie er ihn hinterlassen hat: rund elf Hektar Reben, langes nat\u00fcrliches Trocknen der Trauben, langsame G\u00e4rungen und jahrelange Ruhe in gro\u00dfen alten Botti, wobei jeder Wein erst freigegeben wird, wenn die Familie ihn f\u00fcr bereit befindet. Die Produktion bleibt bei rund sechzigtausend Flaschen pro Jahr, und die ber\u00fchmten handgeschriebenen Etiketten verlassen das Gut in ihrem eigenen gem\u00e4chlichen
