Verwendet werden Corvina, Corvinone und Rondinella, die Ende September von Hand gelesen und anschlie\u00dfend 100 bis 120 Tage in eigens daf\u00fcr vorgesehenen Trockenr\u00e4umen, den sogenannten Fruttai, getrocknet werden, bevor sie Mitte Januar gekeltert werden. Dieser langsame Trocknungsprozess, bekannt als Appassimento, konzentriert Zucker und Aromen und ergibt einen Wein mit ausgepr\u00e4gter Rests\u00fc\u00dfe von rund 128 g\/L, tiefem Fruchtcharakter und festen Tanninen. Der Recioto della Valpolicella gilt als historischer Vorl\u00e4ufer des Amarone: Er teilt dieselben Rebsorten und dieselbe Trocknungsmethode, beh\u00e4lt jedoch die S\u00fc\u00dfe bei, anstatt bis zur Trockenheit durchzug\u00e4ren. Der Jahrgang 2020 zeigt ein intensives, w\u00fcrziges und fruchtbetontes Profil mit guter Tanninstruktur, die den Abgang verl\u00e4ngert.\n\nDomini Veneti ist eine Genossenschaftskellerei mit Sitz in Negrar, in der Valpolicella Classica im nord\u00f6stlichen Venetien. Sie wurde 1947 gegr\u00fcndet und bezieht ihre Trauben von Mitgliedsbetrieben in den Appellationen Valpolicella, Amarone und Soave.
