Er wird aus einem Feldgemisch einheimischer Valpolicella-Sorten sowie kleinen Anteilen Sangiovese und Cabernet Sauvignon aus den Gutsrebfl\u00e4chen rund um Negrar gekeltert. Der Wein wird aus frischen Trauben vinifiziert und nicht nach der Trocknungsmethode des Amarone oder Recioto hergestellt, was ihm einen leichteren und zug\u00e4nglicheren Charakter verleiht. Die Reifung erfolgt in gro\u00dfen Holzf\u00e4ssern \u00fcber einen langen Zeitraum, ganz im Stil des Hauses Quintarelli, der f\u00fcr alle Weine des Guts gilt. Das Ergebnis ist ein Wein, der die f\u00fcr das Gut typische aromatische Komplexit\u00e4t bewahrt und dabei in seiner Jugend zug\u00e4nglich bleibt.\n\nGiuseppe Quintarelli f\u00fchrte das Familiengut auf den H\u00fcgeln von Negrar von 1950 bis zu seinem Tod im Jahr 2012 und setzte einen Ma\u00dfstab, an dem sich die Region noch heute misst. Seine Tochter Fiorenza und ihre Familie f\u00fchren den Keller genau so weiter, wie er ihn hinterlassen hat: etwa elf Hektar Rebfl\u00e4che, lange nat\u00fcrliche Traubentrocknung, langsame G\u00e4rungen und jahrelange Ruhe in gro\u00dfen alten Botti, wobei jeder Wein erst dann freigegeben wird, wenn die Familie ihn f\u00fcr bereit h\u00e4lt. Die Produktion liegt bei rund 60.000 Flaschen pro Jahr, und die ber\u00fchmten handgeschriebenen Etiketten verlassen das Gut noch immer in ihrem eigenen gem\u00e4chlichen
