Die besten Trauben trocknen monatelang auf Rosten im Fruchtboden, wie es der Amarone verlangt, verg\u00e4ren dann langsam durch den Winter und ruhen jahrelang, in den von uns begleiteten Jahrg\u00e4ngen rund neun Jahre, in gro\u00dfen alten Eichenbotti.\nDas Ergebnis ist unverwechselbar: getrocknete Kirsche und Pflaume, Feige, dunkle Schokolade, Tabak und s\u00fc\u00dfe Gew\u00fcrze, mit einem balsamischen Faden und einer Textur, die trotz der Konzentration seidig bleibt.\nDer 2000 ist vollst\u00e4ndig gereift, eine Flasche f\u00fcr einen ruhigen Abend und nicht mehr f\u00fcr den langen Keller.\nBei 18 \u00b0C nach sorgf\u00e4ltigem Dekantieren servieren. Er passt zu geschmorten Rinderb\u00e4ckchen, Wildbret oder gereiftem Monte Veronese, und in Venedig schenken wir ihn zur Pastissada de Caval, dem alten Pferdegulasch, wenn ein Tisch das vollst\u00e4ndige Veroneser Ritual w\u00fcnscht.\n\nGiuseppe Quintarelli, der stille Meister der Valpolicella, f\u00fchrte das Familienweingut am H\u00fcgel von Negrar von 1950 bis zu seinem Tod 2012 und setzte einen Ma\u00dfstab, an dem sich die Region noch heute misst.
