Das Haus stellt ihn seit Generationen auf diese Weise her und legt mehr Wert auf Duft und Balance als auf schiere Kraft. Corvina 50 %, Corvinone 30 %, Rondinella 15 % und Oseleta 5 % aus den H\u00fcgeln der Classica trocknen auf Rosten im Fruttaio bis Februar, und nach einer langsamen G\u00e4rung verbringt der Wein drei Jahre in 35-Hektoliter-F\u00e4ssern aus slawonischer Eiche sowie ein weiteres Jahr in der Flasche vor der Freigabe. Mit 15 % vol. ist er voll und warm, ohne zu \u00fcberladen: Schwarzkirsche und Pflaume mit Ankl\u00e4ngen an Trockenfr\u00fcchte, dann Leder, ger\u00f6stete Gew\u00fcrze und ein rauchig-erdiger Unterton \u00fcber weichen Tanninen und einem langen Abgang. Dies ist der Jahrgang 2017 in der limitierten Seletti-Edition, einem besonderen Gewand um denselben fassgereifen Classico; eine Stunde im Dekanter ist empfehlenswert. Bei 16 bis 18 \u00b0C servieren, dazu geschmorte Rinderb\u00e4ckchen, gereifter Monte Veronese oder Fegato alla veneziana mit weicher Polenta.\n\nTommasi ist seit 1902 ein Familienweingut, als Giacomo Tommasi seinen ersten Weinberg in der Valpolicella Classica n\u00f6rdlich von Verona erwarb. Vier Generationen sp\u00e4ter bewirtschaftet die Familie Hunderte von Hektar, darunter \u00fcber hundert in den H\u00fcgeln der Classica rund um Pedemonte, doch dreht sich im Keller noch immer alles um historische Lagen wie Ca' Florian, Rafael am Monte Masua und die Conca d'Oro. Der Stil ist klassisch veronensisch: langes Appassimento, G\u00e4rung mit nat\u00fcrlichen Hefen, geduldige Reifung in gro\u00dfen F\u00e4ssern aus slawonischer Eiche und ein Sortiment, das vom leicht
