Die Cuv\u00e9e basiert \u00fcberwiegend auf Chardonnay, erg\u00e4nzt durch weitere wei\u00dfe Sorten, die gemeinsam geerntet werden, sobald der Chardonnay seine physiologische Reife erreicht. Alle Rebsorten werden zusammen gemahlen und gepresst, anschlie\u00dfend gemeinsam in neuen franz\u00f6sischen Barriques vergoren; ein Teil des Weines durchl\u00e4uft die malolaktische G\u00e4rung, wonach er zehn Monate auf der Hefe im Fass ruht. Vor der Abf\u00fcllung reift der Wein mindestens sechs Monate in der Flasche. Die Weinberge liegen auf dolomitischem Kalkstein und sandigen B\u00f6den in m\u00e4\u00dfiger H\u00f6he mit s\u00fcd\u00f6stlicher Ausrichtung, was dem Wein mineralische Tiefe und nat\u00fcrliche S\u00e4ure verleiht.\n\nElena Walch ist ein familiengef\u00fchrtes Weingut in Tramin (Termeno), in der Region S\u00fcdtirol (Alto Adige) im Nordosten Italiens. Das Gut ist bekannt f\u00fcr qualitativ hochwertige Wei\u00df- und Rotweine aus einheimischen Sorten wie Gew\u00fcrztraminer sowie internationalen Sorten wie Chardonnay und Cabernet Sauvignon. Elena Walch, von Haus aus Architektin, \u00fcbernahm das Weingut in den 1990er Jahren und wird f\u00fcr die deutliche Anhebung der Qualit\u00e4tsstandards auf den Weinbergen des Gutes gutgeschrieben,
