Beim Ripasso-Verfahren wird der Basis-Valpolicella auf den gepressten Trebern von Amarone und Recioto nachvergoren, was dem Wein mehr K\u00f6rper, Farbe und Komplexit\u00e4t verleiht. Die Cuv\u00e9e basiert auf Corvina, erg\u00e4nzt durch Rondinella und Corvinone, den f\u00fcr dieses Gebiet traditionellen Rebsorten. Die Reifung erfolgt in Eichenholz, das dem fertigen Wein feine W\u00fcrze und Struktur gibt. Das Ergebnis ist ein Wein mit mehr Gewicht und Tiefe als ein normaler Valpolicella, der jedoch zug\u00e4nglicher bleibt als ein Amarone.\n\nMonte del Fr\u00e0 ist das Weingut der Familie Bonomo in Custoza, s\u00fcdwestlich von Verona, das heute von der dritten Generation gef\u00fchrt wird. Es ist vor allem f\u00fcr seinen wei\u00dfen Custoza bekannt, verf\u00fcgt aber auch \u00fcber ein ernstzunehmendes St\u00fcck Rotweinland: die Tenuta Lena di Mezzo, ein 18 Hektar gro\u00dfes Gut in der Valpolicella Classica, dessen Trauben in San Pietro in Cariano in einer Anlage mit Kapazit\u00e4t f\u00fcr 300 Tonnen Trocknungsgut verarbeitet werden. Die besten Parzellen, allen voran der hochgelegene Weinberg Scarnocchio, liefern die Trauben f\u00fcr die Amarone-Abf\u00fcllungen des Gutes, w\u00e4hrend der Hausstil in der gesamten Palette auf
