Der Wein besteht aus 100 % Sangiovese-Trauben aus den \u00e4ltesten Rebparzellen des Guts; alkoholische G\u00e4rung und Malolaktik finden in Betonbeh\u00e4ltern \u00fcber etwa 25 Tage statt. Die Reife erfolgt in zwei Stufen: 12 Monate in Allier-Barriques und 12 Monate in gro\u00dfen F\u00e4ssern aus slawonischer Eiche, gefolgt von einer weiteren Flaschenreife vor dem Verkauf. Der Jahrgang 2014 war in der Toskana ein k\u00fchleres Jahr und brachte einen Wein mit ausgepr\u00e4gter S\u00e4ure, feinen Tanninen und zur\u00fcckhaltendem Fruchtausdruck im Vergleich zu w\u00e4rmeren Jahren. Montevertine trat 1981 aus dem Chianti-Classico-Konsortium aus und entschied sich, den Wein als Toscana IGT zu deklarieren, anstatt die damals vom DOC vorgeschriebenen Rebsorten einzusetzen. Le Pergole Torte wird nur in Jahrg\u00e4ngen produziert, die als qualitativ ausreichend eingestuft werden, was ihn zu einem der selektiver vermarkteten Weine der Appellation macht.\n\nMontevertine ist ein kleines Gut in Radda in Chianti, im Herzen der Chianti-Classico-Zone der Toskana. Das Gut wurde 1967 von Sergio Manetti gegr\u00fcndet und ist bekannt f\u00fcr Sangiovese-Weine au\u00dferhalb der Chianti-Classico-DOCG-Denomination, allen voran Le Pergole Torte, einer der ersten 100-%-Sangiovese-Weine der Region.
