Der Wein entsteht aus einer Cuv\u00e9e traditioneller Veronese Rebsorten, darunter Corvina, Corvinone, Rondinella sowie einige weitere autochthone Sorten. Die Trauben werden vor der Vinifikation f\u00fcr eine gewisse Zeit getrocknet, ein Verfahren \u00e4hnlich dem des Amarone, das dem Wein beachtliche Konzentration und Struktur verleiht. Die Reifung erfolgt \u00fcber mehrere Jahre in gro\u00dfen F\u00e4ssern aus slawonischer Eiche. Der Jahrgang 2008 im Veneto war von wechselhaftem Wetter gepr\u00e4gt, sodass im Weinberg eine sorgf\u00e4ltige Selektion n\u00f6tig war, um volle Reife zu erzielen. Der Wein wird erst freigegeben, wenn der Produzent ihn f\u00fcr bereit h\u00e4lt, in der Regel viele Jahre nach der Lese.\n\nGiuseppe Quintarelli, der stille Meister der Valpolicella, f\u00fchrte das Familiengut auf den H\u00fcgeln von Negrar von 1950 bis zu seinem Tod im Jahr 2012 und setzte einen Ma\u00dfstab, an dem sich die Region bis heute misst. Seine Tochter Fiorenza und ihre Familie erhalten den Keller genau so, wie er ihn hinterlassen hat: rund elf Hektar Rebfl\u00e4che, lange nat\u00fcrliche Trocknung der Trauben, langsame Verg\u00e4rungen und jahrelanges Ruhen in gro\u00dfen alten Botti, wobei jeder Wein erst freigegeben wird, wenn die Familie ihn f\u00fcr reif h\u00e4lt. Die Produktion liegt bei rund sechzigtausend Flaschen pro Jahr, und die ber\u00fchmten handgeschriebenen Etiketten verlassen das Weingut in ihrem eigenen, gem\u00e4chlichen
