Der Wein wird aus 100 % Cabernet Franc nach einem konsequent ertragsarmen Ansatz erzeugt, wobei ausschlie\u00dflich Freilaufmost aus der G\u00e4rung verwendet wird. Die Reifung erfolgt in kleinen, erstmals benutzten franz\u00f6sischen Eichenf\u00e4ssern, die dem Wein Struktur verleihen, ohne den Fruchtcharakter zu \u00fcberdecken. Der Jahrgang 2017 hat einen konzentrierten, mineralisch gepr\u00e4gten Wein mit guter Tiefe und Lagerpotenzial hervorgebracht. Die Bezeichnung Lazio IGT ergibt sich aus der Entscheidung des Betriebs, au\u00dferhalb der \u00fcblichen lokalen Appellationen zu arbeiten, um sich auf Terroir und sortenreine Charakteristik zu konzentrieren. Die Weinbereitung bei San Giovenale verl\u00e4uft in jeder Phase langsam und durchdacht, von der Bewirtschaftung der Weinberge bis zur Abf\u00fcllung.\n\nSan Giovenale ist ein kleines Weingut im Gebiet der Tuscia im n\u00f6rdlichen Latium nahe Blera, gegr\u00fcndet von Henrik Ottosson. Das Weingut ist bekannt f\u00fcr die Erzeugung von Bordeaux-Sortenweinen, insbesondere Cabernet-Franc-basierten Weinen, die auf vulkanischen B\u00f6den wachsen. Es hat sich einen Namen damit gemacht, einen ernsthaften, terroir-orientierten Ansatz in der Rotweinproduktion einer Region zu verfolgen, die traditionell nicht mit solchen Sorten in Verbindung
