Die Trauben werden gelesen und anschlie\u00dfend auf Bambusrosten etwa 90 Tage lang getrocknet, ein Verfahren namens Appassimento, das Zucker, Aromen und Tannine konzentriert. Nach dem Keltern folgt eine verl\u00e4ngerte G\u00e4rung, danach reift der Wein mindestens vier Jahre in gro\u00dfen F\u00e4ssern aus slawonischer Eiche, bevor er abgef\u00fcllt wird. Der Jahrgang 2015 in der Valpolicella war von warmen, trockenen Bedingungen gepr\u00e4gt, die eine hervorragende phenolische Reife und Intensit\u00e4t in den getrockneten Fr\u00fcchten f\u00f6rderten. Mit 17 % vol. ist der Wein reich und strukturiert und besitzt die Dichte und Tiefe, die man von einem Riserva erwartet. Er eignet sich gut zur weiteren Lagerung und wird \u00fcber die kommenden Jahrzehnte an Komplexit\u00e4t gewinnen.\n\nZenato wurde 1960 von Sergio und Carla Zenato in San Benedetto di Lugana am S\u00fcdufer des Gardasees gegr\u00fcndet, wo Sergio fr\u00fch und ernsthaft mit der einheimischen Rebsorte Trebbiano di Lugana arbeitete. Die Familie erwarb sp\u00e4ter das Gut Costalunga in Sant'Ambrogio di Valpolicella in den H\u00fcgeln der Classico-Zone, aus dem der Amarone, der Ripassa und die Corvina-Weine stammen.
