Verg\u00e4rt wird mit nat\u00fcrlichen Hefen; anschlie\u00dfend reift der Wein etwa 20 Monate in neuen franz\u00f6sischen Barriques, gefolgt von mindestens 6 Monaten Flaschenruhe vor der Freigabe. Das Ergebnis ist ein tieffarbiger, strukturierter Rotwein der Kategorie Lazio IGT, der auf Rh\u00f4ne- und iberische Sorten setzt, die im trockenen, meeresgepr\u00e4gten Klima der Tuscia gut gedeihen.\n\nSan Giovenale ist ein kleines Gut in der Tuscia im n\u00f6rdlichen Latium, nahe Blera, das von Henrik Ottosson gegr\u00fcndet wurde. Das Weingut ist f\u00fcr Cuv\u00e9es aus Bordeaux-Sorten bekannt, insbesondere auf Cabernet-Franc-Basis, die auf vulkanischen B\u00f6den wachsen. Es hat sich einen Namen gemacht mit einem ernsthaften, terroir-orientierten Ansatz bei der Rotweinerzeugung in einer Region, die f\u00fcr solche Sorten nicht traditionell bekannt
