Der Ripasso wird aus Corvina, Corvinone, Rondinella und Molinara hergestellt, die auf Pergola-Trentina-erzogenen Reben wachsen. Nach einer ersten Pressung und 15 Tagen Schalenmazeration durchl\u00e4uft der Wein eine zweite G\u00e4rung auf Amarone-Trester f\u00fcr etwa 20 Tage, das Verfahren, das dem Ripasso seinen zus\u00e4tzlichen K\u00f6rper und seine Komplexit\u00e4t verleiht. Der Wein reift anschlie\u00dfend in Tonneaux, bevor er mit 14 % Alkohol abgef\u00fcllt wird. Die Farbe ist ein tiefes Rubinrot, und der Wein zeigt reife Pflaumen- und Kirscharomen neben weichen Tanninen und einem anhaltenden Abgang.\n\nMonte Santoccio ist das kleine Weingut in Fumane von Nicola Ferrari, der mit 26 Jahren im Keller von Giuseppe Quintarelli begann und aus diesen Jahren die Gewohnheit mitnahm, jeden Schritt vom Weinberg bis zur Flasche selbst zu kontrollieren. Das Anwesen umfasst knapp \u00fcber drei Hektar eigene Weinberge in der Valpolicella Classica, naturnah bewirtschaftet und vollst\u00e4ndig von Hand gelesen. Das Sortiment bleibt bewusst klein und traditionell: Valpolicella Classico und Superiore, ein Ripasso, Amarone und der Recioto Stella, Weine, die auf Klarheit, Geduld und ehrlichen Wert setzen statt
