Der Amarone 2018 wird aus Corvina (50 %), Corvinone (20 %), Rondinella (25 %) und Molinara (5 %) hergestellt, alle von Hand gelesen und auf traditionelle Weise durch den Appassimento-Prozess nat\u00fcrlich getrocknet, bevor sie gepresst werden. Nach der Verg\u00e4rung reift der Wein mindestens drei Jahre in Eichenholzf\u00e4ssern, wodurch die f\u00fcr die Appellation typische Struktur und Konzentration aufgebaut wird. Das Ergebnis ist ein tiefes Rubinrot mit bemerkenswerter Dichte, kr\u00e4ftigen dunklen Fr\u00fcchten und einer ausgewogenen W\u00e4rme und S\u00e4ure. Die Produktion ist handwerklich und \u00e4u\u00dferst klein, mit rund 4.000 Flaschen pro Jahr aus dem gesamten Sortiment des Guts. Der Wein wird von Winzer Zeno Zignoli betreut, der den eingriffssarmen Ansatz beibeh\u00e4lt, dem das Gut seit mehreren Generationen folgt.\n\nMonte dei Ragni ist das Ein-Mann-Gut von Zeno Zignoli in Fumane in der Valpolicella Classica und einer der kleinsten ernstzunehmenden Keller der Zone: sechs bis sieben Hektar, von Hand und mit dem Pferdepflug bearbeitet, nach biodynamischen Grunds\u00e4tzen ohne Zertifizierungsstreben. Die Produktion \u00fcbersteigt nie etwa sechstausend Flaschen im Jahr, aufgeteilt auf Amarone, Valpolicella Ripasso sowie kleine Mengen Recioto und Wei\u00dfwein. Die Weine sind das Gegenteil von industrieller Valpolicella: wie ein Garten bewirtschaftet, langsam gemacht und gesch\u00e4tzt f\u00fcr ihre Energie, Pr\u00e4zision und L\u00e4nge statt f\u00fcr
