Der Wein ist ein Verschnitt aus Corvina und Corvinone (70 %), Rondinella (20 %), Croatina (5 %) und Oseleta (5 %), angebaut auf sandigen, schluffigen B\u00f6den mit wei\u00dfem Kalksteinskelett in rund 300 Metern H\u00f6he. Nach einer doppelten Handlese durchlaufen die Trauben ein Appassimento von mindestens drei Monaten, bei dem sie erheblich an Wasser verlieren und dabei Zucker und Aromastoffe konzentrieren. Die Verg\u00e4rung erfolgt in temperaturgesteuerten Stahltanks \u00fcber rund 25 Tage mit ausgew\u00e4hlten Hefen, gefolgt von nat\u00fcrlicher Malo und einer 24-monatigen Reife in neuen 500-Liter-Eichenholzf\u00e4ssern mit w\u00f6chentlichem Batonnage im ersten Jahr. Der fertige Wein zeigt ein tiefes Rubinrot mit violetten Reflexen, ist vollmundig und strukturiert, mit Tannin und S\u00e4ure, die eine weitere Entwicklung erm\u00f6glichen. Der Jahrgang 2021 in der Valpolicella war von warmen, trockenen Bedingungen gepr\u00e4gt, die eine gute Konzentration im Trockenobst beg\u00fcnstigten.\n\nTenuta Sant'Antonio ist ein familiengef\u00fchrtes Gut der vier Br\u00fcder Castagnedi im Illasi-Tal im \u00f6stlichen Valpolicella-Gebiet des Veneto. Das Weingut wurde 1989 gegr\u00fcndet und umfasst rund 100 Hektar Weinberge. Es ist vor allem f\u00fcr seinen Amarone della Valpolicella und Valpolicella Superiore bekannt, erzeugt aus einheimischen Sorten wie Corvina, Corvinone und
