Der Wein wird nach der traditionellen Appassimento-Methode hergestellt, bei der die geernteten Trauben mehrere Monate lang getrocknet werden, bevor sie gepresst werden, was Zucker, Aromen und Struktur konzentriert. Nach der Verg\u00e4rung reift der Wein eine l\u00e4ngere Zeit in Eichenf\u00e4ssern, bevor er als Riserva abgef\u00fcllt wird, was gem\u00e4\u00df DOCG-Vorschriften eine Mindestreifezeit von vier Jahren erfordert. Das Ergebnis ist ein Wein von betr\u00e4chtlichem Gewicht und Komplexit\u00e4t, mit Schichten aus Trockenfr\u00fcchten, Gew\u00fcrzen und w\u00fcrzigen Noten, getragen von festen Tanninen. Monte Del Fr\u00e0 ist ein Familiengut in Custoza, das auch Weinberge in der Valpolicella Classico-Zone besitzt.\n\nMonte del Fr\u00e0 ist das Weingut der Familie Bonomo in Custoza, s\u00fcdwestlich von Verona, das heute von der dritten Generation gef\u00fchrt wird. Das Gut ist vor allem f\u00fcr seinen wei\u00dfen Custoza bekannt, besitzt aber auch ein ernstzunehmendes St\u00fcck Rotweinland: die Tenuta Lena di Mezzo, ein 18 Hektar gro\u00dfes Gut in der Valpolicella Classica, dessen Trauben in San Pietro in Cariano in einer Anlage mit Kapazit\u00e4t f\u00fcr die Trocknung von 300 Tonnen Trauben verarbeitet werden. Die besten Parzellen, allen voran der hoch gelegene Weinberg Scarnocchio, liefern das Traubengut f\u00fcr die Amarone-Abf\u00fcllungen des Gutes, w\u00e4hrend der Hausstil in der gesamten Palette
