Anschlie\u00dfend reift er mindestens f\u00fcnf Jahre in gro\u00dfen Ovalen aus slawonischer Eiche, mit regelm\u00e4\u00dfigem Auff\u00fcllen als einzigem Kellereingriff, bevor er ein weiteres Jahr in der Flasche verbringt.\n\nZym\u00e8 ist das Projekt von Celestino Gaspari, der das Handwerk des Weinmachens an der Seite von Giuseppe Quintarelli, seinem Schwiegervater, erlernte, bevor er 1999 sein eigenes Etikett gr\u00fcndete. Der Keller liegt in Mattonara in San Pietro in Cariano, eingebaut in einen seit dem f\u00fcnfzehnten Jahrhundert genutzten Sandsteinbruch, und sch\u00f6pft aus rund 30 Hektar, die \u00fcber die Valpolicella Classica, die Soave- und Durello-H\u00fcgel sowie die Colli Berici verteilt sind. Der Name stammt aus dem Griechischen und bedeutet Hefe, eine Anspielung auf G\u00e4rung und Wandel, und die Weine folgen diesem Gedanken: einheimische Trauben, geduldige Reifung und rund 150.000
