Die Cuv\u00e9e besteht zu 70% aus Corvina und Corvinone, zu 25% aus Rondinella und zu 5% aus Molinara; die Trauben trocknen rund 100 Tage und verlieren dabei etwa 40% ihres Gewichts, bevor sie vergoren und 24 Monate in 500-Liter-Tonneaux aus franz\u00f6sischer Eiche, weitere 18 Monate in F\u00e4ssern aus slawonischer Eiche und ein Jahr in der Flasche reifen. Der Stil hat stets die Balance vor der blo\u00dfen Gr\u00f6\u00dfe bevorzugt: Sauerkirsche und Pflaume neigen zu D\u00f6rrobst, Zimt und Nelke, Tabak, dunkler Schokolade und einem festen, frischen R\u00fcckgrat, das den Abgang tr\u00e4gt. Der 2007er hat ein reifes Stadium erreicht: Die Flasche einen Tag vorher aufrecht stellen und kurz \u00fcber eventuell vorhandenen Bodensatz dekantieren. Bei 16 bis 18 \u00b0C servieren, zum Rinderschmorbraten in Amarone, Pastissada de Caval oder gereiftem Monte Veronese am Ende eines venezianischen Abendessens.\n\nDie Familie Speri bewirtschaftet die Valpolicella Classica seit der ersten H\u00e4lfte des 19. Jahrhunderts und befindet sich mittlerweile in der siebten Generation, arbeitet noch immer ausschlie\u00dflich auf ihren eigenen 60 Hektar und nur mit den heimischen Rebsorten des Tals. Von der Basis in Pedemonte aus f\u00fchrt die Familie einen geschlossenen Kreislauf: Jede Flasche stammt aus eigenem Lesegut, und seit 2015 ist die gesamte Produktion bio-zertifiziert. Das Haus ist Mitglied der Famiglie Storiche, und sein Amarone vom Monte Sant'Urbano in Fumane gilt seit Langem als Referenz f\u00fcr den klassischen, ungek\u00fcnstelten Stil der
