Jede Parzelle wird separat in Edelstahl mit einheimischen Hefen vergoren, mit einer Maischestandzeit von 8 bis 12 Tagen, bevor die endg\u00fcltige Cuv\u00e9e nur aus F\u00e4ssern zusammengestellt wird, die den Qualit\u00e4tsanforderungen des Guts entsprechen. Der Jahrgang 2014 war in Barolo k\u00fchl und zu Beginn der Saison nass, was Weine von moderater Konzentration, ausgepr\u00e4gter S\u00e4ure und klar definierter Struktur statt \u00fcberw\u00e4ltigender Kraft hervorbrachte. Der Wein reift in neutralen franz\u00f6sischen Eichenf\u00e4ssern, ein Stil, der die Terroirauspr\u00e4gung und den nat\u00fcrlichen Charakter des Nebbiolo \u00fcber den Holzeinfluss stellt. Das 1921 in Castiglione Falletto gegr\u00fcndete Gut wird heute von Enrico Scavino und seinen T\u00f6chtern Enrica und Elisa auf rund 30 Hektar Barolo-Weinbergen gef\u00fchrt. Dieser Einstiegs-Barolo gilt f\u00fcr die Appellation als vergleichsweise fr\u00fch zug\u00e4nglich, bietet aber dennoch ein ernsthaftes Reifepotenzial.\n\nPaolo Scavino ist ein Familiengut mit Sitz in Castiglione Falletto in den Langhe-H\u00fcgeln des Piemonts. Das 1921 gegr\u00fcndete Gut wird heute von Enrico Scavino und seinen T\u00f6chtern gef\u00fchrt und gilt als einer der f\u00fchrenden Barolo-Produzenten.
