Der Wein wird nach der Doppelfermentations-Ripasso-Methode erzeugt: Eine erste G\u00e4rung findet im November statt, gefolgt von einer zweiten G\u00e4rung auf den getrockneten Traubentr\u00f6stern von Ca' Bottas eigenem Tenuta Caj\u00f2 Amarone della Valpolicella DOCG, die im Januar im hauseigenen patentierten Fermentino-Ca'-Botta-Tank durchgef\u00fchrt wird. Die Trauben werden 60 Tage lang an der Luft getrocknet (Appassimento), bevor sie gepresst werden, was dem fertigen Wein Konzentration und K\u00f6rper verleiht. Die Reifung erfolgt in franz\u00f6sischen Barriques, die Struktur und W\u00fcrze beisteuern und dabei den Fruchtcharakter der erh\u00f6ht gelegenen Weinberge erhalten. Der Jahrgang 2019 hat 14,5 % Alkohol und ist jetzt trinkfertig, hat aber in den kommenden Jahren noch weiteres Reifepotenzial.\n\nTenute Ca' Botta bewirtschaftet seit 2008 die H\u00fcgel nord\u00f6stlich von Verona, mit seinem Sitz in Grezzana und Weinbergen, die auf rund 500 Meter ansteigen. Die Identit\u00e4t des Hauses ist vollst\u00e4ndig auf getrocknete Trauben ausgerichtet: Fast jeder Rotwein durchl\u00e4uft das Appassimento, und die G\u00e4rung findet im hauseigenen patentierten Fermentino-Ca'-Botta-Tank statt, der darauf ausgelegt ist, ungew\u00f6hnlich hohen Extrakt und K\u00f6rper aus den Fr\u00fcchten zu gewinnen. Das Ergebnis sind dichte, dunkle, s\u00fc\u00dflich gew\u00fcrzte Weine in einem ausgesprochen modernen Stil, einige ohne Sulfitzusatz, die weit \u00fcber das Venetien hinaus ihre K\u00e4ufer gefunden
