Die Cuv\u00e9e setzt sich aus Corvina und Corvinone (70%), Rondinella (20%) sowie Croatina und Oseleta (10%) zusammen, angebaut auf sandigen, schluffigen B\u00f6den mit reichem wei\u00dfem Kalksteinskelett. Der Wein wird im Oktober auf den abgepressten Trebern von Amarone-Trauben nachvergoren, ein Verfahren, das dem Basis-Valpolicella mehr K\u00f6rper, Farbe und aromatische Komplexit\u00e4t verleiht. Die malolaktische G\u00e4rung verl\u00e4uft nat\u00fcrlich in 500-Liter-Tonneaux, zu etwa 30% neu und zu 70% einj\u00e4hrig, mit monatlichem Battonage bis Oktober des Folgejahres. Der Jahrgang 2021 zeigt ein tiefes Rubinrot mit leuchtendem Granatrand und ein Profil, das von frischer roter Frucht zu eher w\u00fcrzigen, mineralischen Noten im Abgang wechselt. Das Magnum-Format (1,5 l) erm\u00f6glicht im Vergleich zur Standard-Flasche von 750 ml eine langsamere und gleichm\u00e4\u00dfigere Entwicklung in der Flasche.\n\nTenuta Sant'Antonio ist ein familiengef\u00fchrtes Weingut in Illasi in der \u00f6stlichen Valpolicella-Zone in Venetien, Italien. Es wurde 1989 von den Br\u00fcdern Castagnedi gegr\u00fcndet, die rund 100 Hektar Weinberge in den Appellationen Valpolicella und Soave bewirtschaften.
