Der Wein basiert auf Rondinella Bianca, einer nat\u00fcrlichen albinotischen genetischen Mutation der roten Rondinella-Traube, die Gaspari in seinen eigenen Weinbergen identifiziert und selektiert hat. Die Cuv\u00e9e wird durch Gold Traminer, Kerner und Incrocio Manzoni erg\u00e4nzt, vier Sorten, die zusammen f\u00fcr einen Wei\u00dfwein aus diesem Teil des Veneto ungew\u00f6hnlich sind. Nach der G\u00e4rung ruht der Wein mindestens sechs Monate auf der Hefe, was der Struktur Textur und eine dezente Cremigkeit verleiht. Der fertige Wein zeigt ein blasses Strohgelb mit gr\u00fcnlichen Reflexen und eine ausgepr\u00e4gte, glycerinbedingte Viskosit\u00e4t.\n\nZym\u00e8 ist das Projekt von Celestino Gaspari, der den Weinbau an der Seite von Giuseppe Quintarelli, seinem Schwiegervater, erlernte, bevor er 1999 sein eigenes Label gr\u00fcndete. Der Keller liegt in Mattonara in San Pietro in Cariano, eingebaut in einen Sandsteinbruch, der seit dem f\u00fcnfzehnten Jahrhundert genutzt wird, und sch\u00f6pft aus etwa 30 Hektar Weinbergen, die \u00fcber die Valpolicella Classica, die Soave- und Durello-H\u00fcgel sowie die Colli Berici verteilt sind.
