Die Trauben werden im Edelstahltank mit nat\u00fcrlichen Hefen vergoren und anschlie\u00dfend in neutralen franz\u00f6sischen Eichenf\u00e4ssern gereift, eine Methode, mit der die Familie den Charakter der einzelnen Lagen herausarbeitet. Der Jahrgang 2011 in Barolo war warm und trocken und brachte Weine mit reifen Tanninen, zug\u00e4nglicher Frucht und fr\u00fcherer Trinkreife als k\u00fchlere Jahre. Diese Abf\u00fcllung zeigt S\u00fc\u00dfkirsche, Erdbeere und Lakritze mit ausgewogenen Tanninen und einem w\u00fcrzigen Abgang, was f\u00fcr die Weichheit dieses Jahrgangs typisch ist. Mit \u00fcber zehn Jahren Flaschenreife trinkt er sich heute sehr gut, wobei Flaschen unter guten Kellerbedingungen noch einige weitere Jahre reifen k\u00f6nnen.\n\nPaolo Scavino ist ein familiengef\u00fchrtes Weingut in Castiglione Falletto in den Langhe-H\u00fcgeln des Piemont. Das 1921 gegr\u00fcndete Gut wird heute von Enrico Scavino und seinen T\u00f6chtern gef\u00fchrt und gilt als einer der f\u00fchrenden Barolo-Produzenten. Das Weingut ist bekannt f\u00fcr seine Einzellagen-Barolo-Abf\u00fcllungen, darunter Bric d\u00ebl Fiasc und Cannubi, sowie f\u00fcr seinen Einsatz von Rotationsfermentern und einen Stil, der
