Corvina, Rondinella und Molinara trocknen in den traditionellen Trockenboden-Lofts durch die Wintermonate, und die lange Appassimento ergibt einen Wein, den das Haus selbst als reich, warm und rund bezeichnet. Man darf gereifte Kirsche, gekochte Pflaume, Zimt und eine bittermandelige Note am Abgang erwarten, mit samtig weichen Tanninen und einer Keller-Lebenserwartung von Jahrzehnten. Neben dem strengeren Mazzano ist er der Amarone der Textur und des Duftes, nicht der Kraft, weshalb alte Flaschen dieser Lage ihren Reiz bewahren. Der 2007 hat ein voll ausgereiftes Stadium erreicht; die Flasche vorher aufrecht stellen, kurz und vorsichtig dekantieren und am selben Tag trinken. Bei 18 \u00b0C zu geschmorter Ente, Rinderwange in Amarone oder gereiftem Monte Veronese servieren; in Venedig passt er \u00fcberraschend gut zu Fegato alla veneziana.\n\nMasi verdankt seinen Namen dem Vaio dei Masi, dem kleinen Tal in der Valpolicella Classica, das die Familie Boscaini am Ende des achtzehnten Jahrhunderts erwarb, und wird nach sieben Generationen noch immer von der Familie gef\u00fchrt. Das Haus hat seinen Namen auf der Appassimento aufgebaut, dem winterlichen Trocknen der Trauben f\u00fcr Amarone und Recioto, das seine Technikergruppe seit Jahrzehnten erforscht und verfeinert hat, sowie auf der Wiederbelebung alter veronischer Sorten wie Oseleta. Neben dem weit exportierten Costasera f\u00fcllt das Haus zwei historische Cru-Amarones ab, Campolongo di Torbe und Mazzano, und pflegt die Weinberge des Guts Serego Alighieri, Heimat der Nachkommen
